The ingredient of Vegetable Apricot Rice Pilaf
- 2 tablespoons olive oil
- 1 medium white onion roughly chopped
- 1 teaspoon ground turmeric
- 2 cinnamon sticks
- 500g 2 1 2 cups basmati rice rinsed drained
- 1l 4 cups massel vegetable liquid stock
- 300g can chickpeas drained
- 75g 1 2 cup dried apricots halves
- salt ground black pepper to taste
- 2 medium ripe tomatoes diced
- 1 1 2 tablespoons fresh mint roughly chopped
The Instruction of vegetable apricot rice pilaf
- heat the olive oil in a large heavy based saucepan over medium heat add the onion and cook for 3 minutes or until soft stir in the turmeric and cinnamon sticks and cook for 1 minute add the rice and cook stirring constantly for 1 2 minutes or until rice is well coated with oil stir in the stock chickpeas apricots and salt and pepper to taste
- bring to the boil over high heat stirring occasionally cover the pan with a fight fitting lid reduce heat to low and simmer for 9 10 minutes or until rice is tender see microwave tip stir in the tomatoes
- remove the cinnamon sticks and serve the pilaf sprinkled with mint
