The ingredient of Roast Vegetable Soup

  • olive oil
  • 2 sweet potato
  • 8 potatoes
  • 3 onions
  • 3 red capsicum
  • 5 carrots
  • 1 2 jap pumpkin
  • 1l massel chicken style liquid stock
  • 50ml milk

The Instruction of roast vegetable soup

  • place vegetables in a roasting pan and toss with oil roast at 180c until they are golden brown on the outside
  • transfer the vegetables to a large pot and fill with chicken stock until the vegetables are just covered
  • simmer until everything in the pot is soft
  • blend contents of the pot into a smooth puree
  • add milk to your desired thickness
  • serve with crusty bread
